It seems like an all-knowing god wouldn’t have so many discrepancies and contridictions in his writings. It’s almost like it was all written by man.

Now, now, that’s a totally unfair portrayal of historical Jesus. These stories about his miracles weren’t even written until decades after they happened, and then a ton of the writings were thrown out when it was decided that only some of the writings would be canonized by Constantinople.
Our god is a forgiving god. Except when he’s a vindictive little brat intent on punishing the humans for what he already knew they would do.
